Stir Fried Pechay with Tomatoes and Mushrooms Recipe Ingredients

Here's a great vegetable dish that anyone can make. This Pechay Stir-Fry Recipe involves just a couple of healthy vegetables. It's best served as a healthy side to go along with some protein and rice. It's a recipe that I got from my mom and it is also one of the first vegetable dishes I ever cooked.

Ingredients: 

1 Teaspoon vegetable oil
350g Pechay, chopped
1/4 Cup Champignon mushrooms, sliced
2 Tomatoes
3 Cloves Garlic, minced
1 Medium Onion, minced
Salt to taste (or Maggie Magic Sarap)

Preparation: 
  1. Make sure to clean the vegetables well in water and vinegar. In preparing the Pechay, begin by chopping off the roots. Separate the stems from the leaves, and slice each to smaller pieces (I do it in 3 separate cuts for each).
  2. Stir the garlic and onion in heated vegetable oil for around a minute. Add the mushrooms and stir the ingredients together.
  3. Add the pechay stems next since these take a bit longer to cook. Add some salt (or Magic Sarap) and stir the vegetables together.
  4. Finally, add the leaves and tomatoes to the pan. Add more salt (or Magic Sarap) to taste and stir together until the pechay leaves are cookes.
