Erwan Heussaff's Pesto Pasta: is it Any Good? - Ingredients

Last week, Erwan Heussaff shared his very own version of a 3-Herb Homemade Pesto Recipe on his personal website, The Fat Kid Inside. I know that a lot of people have been giving him a hard time, making accusations that his food doesn't taste any good. Well, let's put that to the test, shall we?

I'm here to give an honest opinion on what his food actually tastes like. Does it taste any good? Maybe he just has a French palate that doesn't really understand the types of flavors that Filipinos want?

Difficulty: Easy
Yields: 5 Servings
Total Cost: 150 Pesos
Cost per Serving: 30 pesos


Ingredients: 
450g Pack of Pasta (I used Spaghetti)
6 Cloves Garlic
30g Basil Leaves
30g Parsley
30g Mint
50ml Extra Virgin Olive Oil 
30g of Hazelnuts (or any nuts)
Salt and Pepper, to taste
Optional: Tomatoes and Parmesan

Preparation:
  1. Crush the garlic cloves and set them aside for around 10 minutes. Place equal amount of basil, parsley, and mint leaves in a blender or food processor. Add the hazelnuts, garlic and a generous amount of extra virgin olive oil. Season with salt and pepper to add some flavor and blend together until fine. 
  2. Cook the Spaghetti pasta according to instructions on the package. Normally, you need to place the pasta on boiling water seasoned generously with salt, and cook for around 10 minutes while stirring occasionally.
  3. Add some extra virgin olive oil  and the tomatoes in a pan while the pasta is cooking. Stir in the pesto blend after around a minute. Make sure to really stir so that it's evenly cooked and don't let the pan get too hot so that you don't burn the herbs. At this point, you might even want to add some Parmesan to add some flavor. 
  4. Combine the cooked pasta and the pesto sauce and enjoy.

This pesto recipe is really good! I think that the people who have been criticizing Erwan's recipes haven't really tasted his food or cooked the recipes according to what he has shared. This is a dish that I will cook all over again.

My only negative comment with this dish is that it was a bit dry. It might have been my mistake and not particularly due to Erwan's recipe. I'll try to make some adjustments next time. Maybe a lot more basil and a little bit less mint too. Nonetheless, it's a great dish and I commend The Fat Kid Inside for sharing a wonderful recipe to the rest of us. It's not a restaurant-caliber dish, but it's good enough to impress a friend or two in a dinner party. If you tweak it a bit, you could probably make it restaurant ready.
